1De bone the chicken thighs and season. Fry in a small amount of olive oil until cooked through.
2Remove and set aside.
3Dice onion and squash.
4Fry in same pan as chicken with parsley, black and red pepper to taste until the zucchini is tender.
5Place chicken and veggies into food processor or blender and blend until pieces are small and uniform.
6Cut baguette in half and then slice one side so it opens (but keep the other side closed.)
7Press the bread down inside and stuff with chicken mix until very full. Close and wrap tightly in foil and bake at 350º for 15 minutes.
8Remove, unwrap, and slice crosswise. Enjoy!
